Overview

We are seeking an experienced and hands-on Head Chef to lead the kitchen of a landmark 150-seater pub in the heart of Dublin. This is an exciting opportunity to take full ownership of a busy, high-volume kitchen serving classic Irish pub food to a steady mix of locals, tourists, and group bookings throughout the year.

Day-to-Day Responsibilities

  • Lead and manage all kitchen operations, ensuring smooth service during busy lunch, dinner, and peak tourist periods.
  • Oversee food preparation and presentation to ensure every dish meets the pub’s quality and consistency standards.
  • Manage kitchen workflow, staffing, and section coordination in a high-volume service environment.
  • Train, coach, and motivate kitchen staff to maintain strong performance, discipline, and teamwork.
  • Monitor stock levels, place orders, control waste, and maintain tight food cost and labour cost controls.
  • Work closely with management to develop menus, seasonal specials, and operational improvements that suit the pub’s style and customer base.
  • Ensure full compliance with food safety, hygiene, health, and safety regulations at all times.
  • Handle kitchen scheduling, rota planning, and day-to-day problem solving to keep service efficient and reliable.
  • Maintain a clean, organised, and professional kitchen environment that supports fast and safe service.

Requirements:

  • Demonstrated experience managing a busy kitchen service, ideally in a 100+ cover environment.
  • Excellent leadership skills with the ability to train, organise, and inspire a kitchen team.
  • Strong knowledge of food safety, HACCP principles, hygiene standards, and kitchen compliance requirements.
  • Experience controlling food costs, stock, ordering, waste reduction, and gross profit margins.
  • Ability to stay calm and effective under pressure during full-house service and large tour group bookings.
  • Strong communication and organisational skills with a hands-on, solutions-focused approach.
  • Flexibility to work evenings, weekends, and public holidays as required by the hospitality trade.
  • Formal culinary training or equivalent professional kitchen experience is preferred.
